Finally, something other than a soup recipe from Samantha! Rejoice! This is a totally made up recipe of my own, so please don't blame me if it tastes terrible... I kind of improvised as I went and it was a bit of "what do I have in the house that needs to be cooked before it goes bad?". With that said, I thought it was pretty dang tasty!
This recipe combines a few of my favorite healthy things, sweet potatoes, spinach, and chicken. Minus the chicken and add some sausage and it sounds like a delicious mix of ingredients for a breakfast bake. I digress.
Sweet Potato, Chicken and Spinach Bake (with some chipotle peppers in adobo sauce for some kick!)
3 sweet potatoes cubed
4 cups spinach
1lb boneless skinless chicken breast cut into bite size pieces
2 tablespoons Chipotle Peppers in Adobo Sauce
2 chipotle peppers finally diced
2 cloves garlic minced
2 teaspoons lime juice
2 tablespoons olive oil
3 teaspoon dried oregano
2 teaspoon cumin
3 teaspoons chili powder
salt and pepper
sharp white cheddar cheese to taste
Let's get cookin':
- Preheat oven to 350 degrees
- Peel and cut the sweet potatoes into bite size cubes, mix with olive oil. Season with the oregano, cumin, chili powder, salt and pepper. Place on a cookie sheet and bake for 35-45 minutes, until soft to poke with a fork
- While the sweet potatoes are cooking, mix the uncooked chicken with the lime juice, adobo sauce (I left out the peppers in the adobo and just used the sauce), chipotle peppers, garlic and more salt and pepper if you want. Throw the seasoned chicken and any juice in a pan and cook on medium high until close to done (about 7-10 minutes). Add the spinach to the pan with the chicken and wilt it down a bit.
- Once the chicken mix and the sweet potatoes are done mix them together and add some cheddar cheese for garnish on top, serve warm.
