We are in full blown "New Year" mode around here. Nicole is obviously adjusting to a new life in this New Year and in my household we're working to save lots of money, exercise regularly and concentrate on healthy eating. For me, that means cutting out all the cheez-itz (that I don't even buy for myself!) and sticking to my meal plan.
I wrote about my fitness goals earlier this week and have discussed my meal planning methods to stay healthy previously. I also posted my first meal plan of the New Year last week and it was a huge hit, so I thought I would do it again! I generally find my recipes for the week on Pinterest but I do occasionally plan out of one of my many cookbooks as well.
So without further ado... here is my weekly meal plan for next week - it's all healthy, tasty and relatively easy! I don't do "meal prep", I don't spend hours in the kitchen - ever, and I don't prep or pack separate lunches. I very intently pick meals that will have leftovers to take for lunch the next day and usually plan 4 meals for the week, as one night I'm usually lazy and we eat out occasionally as well.

I can't believe I found a recipe on BuzzFeed of all places but I cannot look away from those step by step speedy videos of baking or cooking and this was one of them that actually looked delicious and healthy!
Sloppy Joe stuffed Sweet Potatoes
Guys, I'm kind of obsessed with SkinnyTaste, I have one of the cookbooks and meal plan from Gina's blog pretty regularly. I've never made these but they look delicious (as does anything with sweet potato) and J won't hate it (hypothetically) because it has meat! Win w

Generally, I would do a Philly with roast beef but this one calls for ground beef. Weird? Yes. Worth a shot? Sure. I love a good Philly Cheesesteak so we will see how this one stacks up, I'll be sure to report back!
