Week 5 Healthy Meal Plan

I've really enjoyed sharing a couple weekly meal plans with you this year so I thought, why not share another? I tend to do my meal planning randomly throughout the week as I come across recipes on Pinterest and while flipping through cookbooks and then since I work from home, I do my grocery shopping on my lunch on Mondays. I've mentioned before that I generally only plan four meals. I do this because there's usually at least one night where we go out or where I don't feel up to actually cooking a meal so when I plan for 4, we usually make and eat them all and don't waste hardly anything - which I love! 

This week I've got a little mix of everything. I could really avoid eating meat without much thought, which saves a ton of money and can be better for your heart depending on what type of meat you're eating, but Justin is always still hungry after eating a meal without any meat in it. Claims he's a growing boy and needs his protein. HA. Anyways, because of that I've tried to figure out some cost-effective ways to add meat to our meals while still keeping them healthy as well. Here is next weeks meal plan!

Easy One Pot Lasagna Soup

I've actually made this before and although it's not the skinniest of meals, it is delicious and super filling and warm and cozy for a winter night. It calls for ground beef but I actually tend to lean towards ground turkey and I don't think Justin would ever know the difference :)

Spicy Kale and Chipotle Chickpea and Roasted Butternut Squash Salad (What a name!!)

I have not made this one before but something about a warm winter salad just makes me swoon a little bit. I personally love roasted chickpeas so I know this is going to be delicious. Add in kale and butternut squash and you've got a truly nutrient packed meal!

Because who doesn't love a good taco? This is another one that can be super nutrient packed and healthy and I can still throw in a bit of (inexpensive) ground beef to make Justin happy. Plus, tacos without meat? I'll pass. This bowl has everything I love, sweet potato, cucumber, tomato, avocado, it's going to be deliciousssss.

Meal #4
20-Minute Shrimp and Sausage Skillet Meal

SO MUCH MEAT for Justin :) We've got shrimp (my favorite thing ever ever) in this meal and sausage, which is real high on Justin's list of favorite things, not so high on mine. That's okay, I'll eat around it. Besides the meat, this skillet meal is packed with veggies and red pepper flakes to give it a bit of kick. I just know this is one of the meals that will still taste extraordinary the next day for lunch!
